Dr. Shai Barbut, Professor and Faculty Advisor at the Food Science department published recently an e-book titled “The Science of Poultry and Meat Processing” available for free download.

Dr. Barbut’s research focuses on factors affecting meat quality, protein gelation with an emphasis on structure function relationships, rheological properties and food safety.
